Colorful Salad – Mango, Avocado, Grapefruit

This colorful salad is a symphony of flavors, from both the dressing and the fruits and vegetables. Mediterranean-style recipes are not just healthy, but delightful.

Ingredients:

2 tablespoons lemon juice

1 teaspoon orange zest

2 teaspoons low sodium soy sauce

¼ teaspoon ginger powder (I prefer fresh ginger, but didn't have any. If you do use fresh, increase to 2 teaspoons or more, as desired.)

¼ teaspoon curry powder

2 tablespoons extra virgin olive oil

4 cups Romaine lettuce, washed, drained and broken into bite-sized pieces

1 large ripe mango, diced

1 red pepper, diced

1 ruby red grapefruit, peeled and sectioned

1 large ripe avocado, diced

12 large cooked shrimp

3 green onions, sliced

¼ cups Pistachios

Directions:

Whisk first 6 ingredients in a small bowl to blend. Arrange lettuce in bottom of serving dish or divide onto individual plates. Arrange the remaining ingredients on the lettuce. Serve with the dressing.

Whisk the dressing ingredients.

Gather the salad ingredients.

Squeeze the lemon.

Zest the orange.

Measure four cups of lettuce.

Put lettuce on individual serving plates or a single serving dish.

Peel and section the ruby red grapefruit.

Arrange fruit in dish.

Chop the avocado.

Sprinkle with sliced green onion.

Add the shrimp and nuts.

Drizzle with the dressing and serve.
