Cranberry Shortcake Muffins

Cranberry Shortcake Muffins

Follow the Strawberry Shortcake recipe, recipe number 14 in the Dr. Grandma’s Muffins Your Way recipe booklet, included with each package.

Instead of applesauce, substitute whole berry cranberry sauce; sprinkle a little cinnamon sugar on the top.

The recipe will be done in less than 25 minutes.

Easy Carrot Cake

Using Doctor Grandma’s Muffins Your Way, follow the mixing directions for carrot muffins, with the added nuts and raisins.

Pour into a greased 8″ X 8″ baking dish with vegetable spray or shortening.

Bake at 350˚ F.

After it cools, top with your favorite cream cheese frosting or make your own:

  • 2 (8 ounce) pkgs cream cheese, softened
  • ½ cup butter, softened
  • 2 cups sifted confectioners’ sugar
  • 1 teaspoon vanilla extract

Cream together the cream cheese and butter until creamy.  Mix in the vanilla, then gradually stir in the confectioner’s sugar.

Cooking with Kids

Making Breakfast Fun for the Kids

Feed the children and help them occupy themselves for quite a bit of time with a healthy Dr. Grandma’s pancake breakfast.

Just make round pancakes or Christmas tree-shaped pancakes and give them some of the following to decorate with: slices of bananas, strawberries, peaches, cherries, grapes, raisins, nuts, yogurt, or whipped cream.  They can decorate their ‘trees’ or ‘ornaments’ or make Santa faces, and so on.

Quick Holiday Baking Ideas

There never seems to be enough time during the holidays to do all the things that we’d like to do for others; Dr. Grandma’s is here to help. The following are some ideas for time savers that are healthy.

1.    When you go to a dinner party, offer to bring a dessert cake or muffins.  Joyce Bunderson, also known as Dr. Grandma, recently brought peach muffins to a family gathering and they were the hit of the meal. The mixes are great to have on hand because you can stir up a batch in less than 30 minutes from beginning to end including the baking time! The guests will rave about the muffins being 100% whole wheat.  It’s hard to believe that whole wheat can be so light and delicious.

2.    Make a couple of different muffins recipes (each package makes two batches) and have them on the kitchen on the morning that you’re doing the big cooking days. Serve with milk, tea, juice or coffee and possibly some fresh fruit.  Everyone can choose what they want and you can keep preparing for the main meal event.
