Apple Pie Oatmeal Pancakes, with Applesauce Topping

This pancake was a big hit on multiple counts. To begin with:
- Whole wheat and whole oats (no white flour);
- Fiber from apple peel, oats and whole wheat;
- Flavor of this moist delicious pancake is great. Taste panel says: “It doesn’t need the applesauce topping; it’s so moist.”
- And, “I love the texture added by the the oatmeal.” But the overarching consensus is these pancakes are just plain delicious – forget the nutrition.
Ingredients:
1 ½ cups + 2 tablespoons Dr. Grandma’s Whole Wheat Pancake Mix (or one 1 ½ cup packet)
½ cup Old Fashioned Rolled Oats
½ teaspoon apple pie spice
1 1/2 cups water
1 large egg
1 cup grated washed apple, with skin on (I used Fuji, but any cooking apple will work.)
2 tablespoons of extra virgin olive oil
Directions:
Mix the oats, spice and pancake mix. Mix together the egg, grated apple, water and oil. Pour over the dry pancake mix and oats.
Do not over mix; there may be lumps and that’s fine. Allow to rest a minute or two after mixing before putting first pancake into the skillet. Use the tip or side of the spoon to even out the grated apple in the pan (see picture below).
Cook in a low to moderately heated skillet; turning once.
Top with applesauce and serve.
