Baked Apples and Wheat Berries

A healthy dessert!


1 ¼ cups hard red spring wheat berries (makes about 2 ½ cups of cooked wheat berries)
4 eggs
¼ teaspoon salt
1 teaspoon cinnamon
2 tablespoons extra virgin olive oil

1/3 cup erythritol, other zero-calorie all-natural sweetener, or sugar
vegetable spray
4 - 5 apples, peeled and sliced (about 6 cups of apples)
2 tablespoons of lemon juice


  • Cook wheat berries until tender. See directions for how to cook wheat berries.
  • Preheat the oven to 400º F
  • Separate egg yolks and egg whites.
  • When wheat berries are cool, mix with the egg yolks, Delight, oil, cinnamon and salt.
  • Slice apples and toss with lemon juice.
  • Whip the egg whites to soft peaks.
  • Gently fold the wheat berry mixture into the egg whites.
  • Spray an ovenproof casserole dish with vegetable spray.
  • Fill the dish with the wheat berry mixture and then cover with the sliced apples.
  • Bake for 10 minutes at 400º F.
  • Reduce the heat to 325º F after 10 minutes (to protect from getting too brown. If still browning too much, reduce to 300º F.
  • Bake for 45 minutes, or until knife comes out clean.
