Kid’s Kabobs

Ingredients
- 12 bamboo skewers (unless you have metal ones)
- 2-3 carrots cut into bite size pieces
- 20 ounce can pineapple chunks packed in its own juice (retain juice)
- 14-16 ounces chicken breast tenders boneless skinless, cut into bite size pieces
- 1-2 red peppers cut into bite size pieces
- 2 tablespoons pineapple juice (from can of pineapple chunks)
- 2 tablespoons soy sauce low sodium works fine
- 2 tablespoons extra virgin olive oil
Instructions
- Soak the bamboo skewers in water, if you don’t want the tips to blacken.
- Cut the carrots and cook in a little water until tender or microwave in a covered dish. Drain the pineapple and save the juice.

- Drain the pineapple and save the juice.
- Mix the olive oil, soy sauce and pineapple juice in a large mixing bowl.
- Add all the remaining ingredients and mix to coat.
- Thread the ingredients onto the skewers – any pattern works, as you will learn if the children do it. Have fun.
- Put on a grill, barbecue or on a tray and broil until the chicken is done. In my oven it took about 7 minutes, then I turned them over and cooked for another 6 minutes.
