Wheat Berry Shrimp Salad

It’s really become trendy to prepare nourishing dishes for parties and guests. This recipe can be as elegant and delicious as those served in the finest restaurants. Dr. Grandpa thinks it terrific for dinner at home, guests or not.

Ingredients

  • 1 c. wheat berries
  • 1 c. of cooked salad shrimp or cut larger shrimp
    (can used imitation seafood or cooked chicken)
  • ½ c. coarsely broken pecan pieces
  • ½ c. dried cherries or cranberries
  • ½ c. fresh basil or flat-leaf parsley
  • ½ c. thinly sliced green onions
  • 2 tbsp. extra virgin olive oil
  • 2 tbsp. fresh lime juice

Directions:

Bring wheat berries to boil in 3 ½ cups of water, then simmer for about 60 – 75 minutes. If necessary, add more water. Cool berries.

Toast the pecan pieces on a baking sheet at 350˚F for 6 to 8 minutes. Mix with the berries and remaining ingredients.
