Hot Cross Raisin Muffins

3/4 cups whole wheat flour
1/4 tsp salt
1/8 tsp cinnamon
1/8 tsp nutmeg
1 1/2 tsps baking powder
1/2 tsp baking soda
1 beaten eggs
1 cup applesauce
1/2 cup milk
2 tbsps Extra Virgin Olive Oil
3/4 cup raisins
3 oz. cream cheese
1 cup erythritol
1/3 cup corn starch
Directions:
Preheat oven to 400ยบ F.
Coat muffin pans with vegetable spray.
Mix
1 cup applesauce
1/2 cup milk
2 tbsps Extra Virgin Olive Oil
Two eggs or 1/2 cup egg substitute
Mix
2 cups whole wheat flour
1/2 tsp salt
3/4 tsp cinnamon
3 tsps baking powder
1 tsp baking soda
1/4 cup erythritol (or 3 tbsps sugar)
3/4 cup raisins
Stir two mixtures together until just moist (do not over mix).
Fill 12 muffin tins.
Bake until golden brown and a toothpick comes out clean from the center of the muffin; about 16 to 22 minutes.
Remove from muffin tin to wire rack immediately, before cooling
Makes 12 muffins.
Cream Cheese Frosting:
Mix thoroughly until sweetener is dissolved.
No added sugar version:
3 oz. cream cheese
3/4 cup erythritol, plus 2 tablespoons corn starch
5 teaspoons of milk

Sugar version:
3 oz. cream cheese
1 cup confectioner's sugar
1 tsp. milk
Drizzle a cross on top of each muffin, when muffins are cooled. Or pipe with a rolled piece of waxed paper or piping bag.
