How Fast Is Your Fast Food?

The holidays make many extra demands upon our time; do we have to eat more fast food meals than we ought to just because of bustling around?
Below is a picture of one of our ‘fast food’ meals. There are no recipes, but this is what I did and we still had a healthy American Mediterranean meal:
1. I used a package of frozen white fish in marinara sauce. It is cooked in 5 minutes in the microwave.
2. Brown rice was cooked and stored in a plastic covered bowl in the refrigerator. Put some in a bowl and heated in the microwave for a few minutes.
3. Used frozen stir fry (no chopping) in a little extra virgin olive oil and stirred with a sprinkle of Italian herbs.
4. Put the cooked fish over the heated brown rice.
Voilà! Dinner is served. This was much faster (and healthier) than driving to a fast food restaurant. Consider stocking the freezer and refrigerator, for a time crunch.
