Wheat Berry Waldorf Salad

Wheat berries in Waldorf Salad is a match made in heaven; the texture is delightful. You don’t need to mention to your family or guests that it is nourishing; just let them enjoy the texture and flavors.
Ingredients
Ingredients:
- 1 c. fully cooked wheat berries
- 1 tbsp. Dijon mustard
- 1 tsp. sweetener
- 1 1/2 c. crunchy salad apple; chopped into 1/2 inch pieces
- 1/4 c. celery (optional)
- 1/4 c. raisins (optional)
- 1/3 c. yogurt or mayonnaise
- 2 tbsp. fresh lemon or lime juice
- 1/2 c. walnut or pecans pieces

How many does this recipe serve.?. I have not found this on any of the wheat berry recipes I’ve looked at. It would be so helpful.

I made the decision quite a while ago to not put servings on my recipes. People’s servings sizes vary so much and for mixed items it really hard to gauge how much they will eat. On this particular recipe, it will make about 7 or 8 – 1/2 cup servings. If you have small eaters or children, you’ll get more servings per recipe.

I hope that you got a chance to make the Wheat Berry Waldorf Salad recipe. We love using wheat berries; we love the flavor, texture, nutritional values, and the easy prep. I keep them cooked and on demand in my freezer; so when I’m ready, I don’t need to wait to cook up a batch.

This is a great recipe. Have prepared it more than once and shared with my family who enjoyed it very much. My son even likes the leftovers (if any) to take home to put in his bag lunch for work! Also am passing on to a newcomer to using wheat berries..
