Orange Spicy Pumpkin-Nut Muffins

These muffins can be made with or without the nuts, raisins, orange rind, and cloves. If you do not use the nuts you can double the raisins; and likewise, if you do not use the raisins you can double the nuts. Be creative — make it your way. In my experience, these are some of the most popular muffins, when a variety of choices are offered.
The pumpkin in the following muffin recipe adds yumminess and lots of extra nutrition to the muffins.

Ingredients:

2 cups of Dr. Grandma's Whole Wheat Muffins Your Way Mix (with accompanying 1/4 cup extra virgin olive oil)

Two eggs or ½ cup egg substitute

1 cup canned solid pack pumpkin

½ cup raisins

½ cup broken nuts

Optional Ingredients:

2 teaspoons grated orange rind (use small grater or zester)

¼ teaspoon ground cloves

cinnamon and sugar or sweetener of your choice for topping

Directions:

Preheat oven to 400º F.

Coat muffin pans with vegetable spray.

Mix pumpkin, water, extra virgin olive oil, eggs or egg substitute – mix all the moist ingredients together.

Mix the Dr. Grandma’s Muffins Your Way Mix, raisins, orange zest, ground cloves, and broken nuts.

Stir two mixtures together until just moist (do not over mix).

Fill 12 muffin tins.

Optional: Sprinkle with cinnamon and sugar, if desired.

Bake until golden brown and a toothpick comes out clean from the center of the muffin; about 16 to 20 minutes.

Remove from muffin tin to wire rack immediately, before cooling

Makes 12 muffins.
