Orange Cranberry Nut Muffins

Ingredients:
2 cups of Dr. Grandma's Whole Wheat Muffins Your Way.
Two eggs or ½ cup egg substitute
2 cup chopped fresh or frozen cranberries and 3 tablespoons sugar or 1 cup dried cranberries, no added sugar
1 cup broken nuts
2 teaspoons orange zest
Optional Topping: Sprinkle with cinnamon and sugar, if desired.
Directions:
Preheat oven to 400º F.
Coat muffin pans with vegetable spray.
Mix chopped fresh or frozen cranberries and 3 tablespoons sweetener of choice
¾ cup water plus 1/4 cup of Extra Virgin Olive Oil
Two eggs or ½ cup egg substitute
Add 2 cups of Dr. Grandma’s Muffins Your Way Mix and nuts; mix just until moist (do not over mix).
Fill 12 muffin tins.
Optional: Sprinkle with cinnamon and sugar, if desired.
Bake until golden brown and a toothpick comes out clean from the center of the muffin; about 14 to 18 minutes. Remove from muffin tin to wire rack immediately, before cooling
Makes 12 muffins. Can be frozen.
