Apple Oven Baked Pancake

This oven baked pancake is a type of breakfast cake. It's easy to make and tastes amazing!

Ingredients:

3/4 cup Whole wheat pancake mix
1/2 cup Water
1 large Egg
1 tablespoon Extra virgin olive oil
1/4 teaspoon Vanilla
2 tablespoons Butter
1 small Apple thinly sliced
1 1/2 teaspoons Cinnamon and sugar

Directions:

  • Heat oven to 400°F.
  • While oven is heating, melt butter in 9-inch glass pie plate in oven.
  • Meanwhile, in small bowl, beat egg with wire whisk or eggbeater. Beat in pancake mix, water and vanilla.
  • Pour over melted butter in pie plate.
  • Arrange apple slices on batter.
  • Sprinkle with cinnamon-sugar.
  • Bake 15 to 20 minutes or until edges are deep golden brown.
  • Serve warm with maple syrup; or sweetened non-fat Greek yogurt is perfect.
