Ingredients
- ¾ cup mango diced
- 2 – 3 teaspoons chives snipped
- 1 cup cucumber peeled, seeds removed and diced
- 2 – 3 tablespoons lime juice
- 2 tablespoons cilantro
- 1 cup red pepper diced
- 1 cup avocado diced
Instructions
- Slice mango flesh from each side of the large flat seed.
- Score the mango, then cut away from skin - you then have diced mango.
- Peel, remove seeds and dice cucumber.
- Snip the washed chives.
- Stir all ingredients together to coat with lime juice.
- Set aside while you make your Quick Salmon Patty Cakes.
