    Ingredients

    • ¾ cup mango diced
    • 2 – 3 teaspoons chives snipped
    • 1 cup cucumber peeled, seeds removed and diced
    • 2 – 3 tablespoons lime juice
    • 2 tablespoons cilantro
    • 1 cup red pepper diced
    • 1 cup avocado diced

    Instructions

    1. Slice mango flesh from each side of the large flat seed.

    2. Score the mango, then cut away from skin - you then have diced mango.

    3. Peel, remove seeds and dice cucumber.

    4. Snip the washed chives.

    5. Stir all ingredients together to coat with lime juice.

    6. Set aside while you make your Quick Salmon Patty Cakes.
