Light Cucumber Salsa

July 19, 2010 in Condiments by Joyce Bunderson

This is a very easy recipe with a nice tangy flavor; it can be used for a variety of uses. You can top a salad; garnish fish or chicken; serve it as a salad; or use it for a salsa dip.

Ingredients:

4 cups (about 2 large) cucumbers, diced
1 to 2 tablespoons coarsely chopped fresh dill
1/8 teaspoon salt
1/8 teaspoon black pepper
¼ cup red wine vinegar
2 teaspoons Dr. Grandma’s all-natural, zero-calorie Delight sweetener

Directions:

Slice the cucumbers lengthwise into half; then slice again into 3 pieces. Chop the strips into ½ inch pieces. Combine all ingredients; stir well, cover and refrigerate until ready to serve.
