Fajita Sandwich

I love ‘One Cooking’ – ‘Two or more Meals’! The really nice thing about this is that the two meals are fairly different; both are easy. Last night’s dinner - Pan Roasted Vegetables with Chicken – today’s lunch Fajita Sandwich.</span>
Leftover pan roasted vegetables and chicken (about 2 cups leftover), becomes delicious sandwich.

Ingredients
- 10-inch whole wheat fat free tortilla
- 1-2 tablespoons hummus per tortilla
- 1 cup vegetables and chicken pan roasted, per sandwich or roll-up
- 3/4 ounce cheese per sandwich
- greek yogurt
- to taste Lime juice
- Avocado (optional)
Instructions
- Spread ½ the tortilla with the hummus.
- Put on the vegetable/chicken mixture over the hummus.
- Put a slice of cheese over the vegetable/chicken mixture.
- Fold the empty side of the tortilla on top of the filled side and put into the microwave for about 3 minutes,or until the filling is hot and cheese is melted.
- We added a dollop of nonfat Greek yogurt, with lime juice and a few cubes of avocado to each half.
