Grilled Hummus Sandwich

A hummus sandwich is a healthy, filling lunch that helps you to incorporate beans into your diet. Making fresh homemade hummus does cost less than most store versions; but an additional consideration is that if you make it yourself, you can control the type of oil; use real lemon instead of lemon concentrate; and not have the preservatives included. I personally believe that the store versions are generally a healthy food choice.

Ingredients
- 3 tablespoons roasted red pepper hummus or plain hummus
- 2 slices of bread (preferably whole grain)
- 2 tablespoons red pepper (optional if using Roasted Red Pepper Hummus)
- 2 tomato slices
- 2 tablespoons feta cheese
- 1 tablespoon extra virgin olive oil
- 1 pinch salt
Instructions
- Preheat a nonstick skillet.
- Brush oil on one side of the bread and sprinkle with salt as desired.
- Spread inside of bread with hummus
- Sprinkle with chopped onion and feta cheese.
- Arrange sliced tomato on top. Brush other slice of bread with oil and sprinkle with salt on one side, and spread with hummus on the other side.
- Allow to cook for a couple of minutes. Check to be sure not to burn. Flip as needed
- Serve with a salad, if desired.
