Hurry Day Dinner

Even if you're having a 'hurry-up' day you can still meet your goals of moving toward a Mediterranean diet, a balanced diabetic diet, or a weight loss goal. If the veggies are in the frig and the rice or wheat berries are already cooked, you can make this in a hurry. By the way, if the rice is not cooked and you've picked up some of the quick brown rice, you're still able to make this hurry-up meal.
Gather some veggies and wash.
Slice them and stir in a wok with a tablespoon or two of olive oil.
Sprinkle with grated ginger or ginger powder; and minced garlic clove or two depending on your family's taste.
Add cooked chicken or turkey (drained canned chicken or turkey works) or scallops or shrimp.
Stir until the fish or meat is warm and done.
Add soy sauce to taste.
Serve over hot brown rice or wheat berries.
Sprinkle with toasted sesame seeds or chopped cashews, or peanuts, if desired.

Colorful veggies are nice.

Slice the vegetables.

Mix and sauté with extra virgin olive oil.

Finish off with seasonings and meat.

Sprinkle with chopped nuts or seeds, if desired.
