Apple Oven-Baked Pancakes

This oven baked pancake is a type of breakfast cake. It's easy to make and tastes amazing!
Ingredients:
- 3/4 cup whole wheat pancake mix
- 1/2 cups water
- 1 large egg
- 1 tablespoons extra virgin olive oil (or vegetable oil)
- 1/4 tsp. vanilla
- 2 tbsp. butter
- 1 small apple, very thinly sliced
- 1 1/2 tsp. cinnamon-sugar
Directions:
Heat oven to 400°F.
While oven is heating, melt butter in 9-inch glass pie plate in oven.
Meanwhile, in small bowl, beat egg with wire whisk or eggbeater. Beat in pancake mix, water and vanilla.
Pour over melted butter in pie plate.
Arrange apple slices on batter.
Sprinkle with cinnamon-sugar.
Bake 15 to 20 minutes or until edges are deep golden brown.
Serve warm with maple syrup; or sweetened non-fat Greek yogurt is perfect.
Note: To make a double recipe, use a 9 X 13 glass dish.

I’m glad that you’ve enjoyed some of our posts and are bookmarking to come back. I will share that it really is lots of work keeping current with the research, researching the articles and other issues. Cooking and developing the recipes is a result of creatively trying to provide interesting food for my husband, while not allowing diabetes to come back and afflict him.
