Oatmeal Apple Pancakes

July 21, 2010 in Baked Goods, Pancake Recipes by Joyce Bunderson

We offer you this special recipe for Oatmeal Apple Pancakes. One key here is not to peel the apple, (or in other recipes, for example, the zucchini). Quercetin and other compounds are there to protect the plant against pests and UV sunrays. The compounds are located where the plant needs them the most.

Ingredients

1 packet of Dr. Grandma’s Pancake & Waffle Mix
1/3 cup oatmeal
½ teaspoon cinnamon (optional)
¾ cup grated (not peeled) zingy apples (like Gala, Granny Smith, Cameo, Fuji)
1 egg
1 ½ cups water
2 Tablespoons oil or one oil packet included in Dr. Grandma’s Pancake Package
Chopped nuts (optional)
Yogurt, whipped cream, or syrup

Directions
Mix grated apple, egg, water and oil. Add to pancake mix, optional cinnamon and oatmeal. Pour batter into hot skillet. Turn when pancake has bubbles on surface. Serve with whipped cream, or yogurt topped with chopped nuts if desired. Some enjoy it topped with real maple syrup.
