    Ingredients

    Instructions

    1. Reach in the bag of spring greens and put a few handfuls in a serving dish.
    2. Chop up one seeded red pepper and put on lettuce or greens.
    3. Chop a hard boiled egg or two – put on peppers.
    4. Cut a few canned pickled beets – put on peppers.

    5. Serve with a low calorie dressing or humus.

    6. If not serving with humus, consider sprinkling with rinsed/drained-canned beans.
