Do you ever put diced turkey in the freezer? If yes, maybe you’d like to fill a whole wheat pita bread or serve on a bed of lettuce, like I did. This Curried Turkey Salad is actually a very tasty recipe for a quick healthy American-Mediterranean meal.

¼ cup raisins
1/3 cup peanuts or cashews
¾ cup tender cooked wheat berries
2 Tablespoon chopped green onion
2 Tablespoon chopped fresh parsley
1 cup chopped celery
1 cup cored, chopped apple (crisp tangy apple)*
1 teaspoon of lime or lemon juice*
*After the apples are chopped, toss with lemon or lime juice to keep them from
turning brown.

1/2 Tablespoon yellow curry powder
1/4 cup non-fat Greek yogurt
2 Tablespoons mayonnaise
2 Tablespoons sour cream
1 Tablespoon honey or sweetener of choice
1/4 teaspoon ground ginger
