Yams on a Hawaiian Date

This should really not be called a recipe; it’s just too easy. The flavors together are really quite nice. Do notice that there is no oil, butter, salt or sugar.

    Ingredients

    • 2 cups pineapple fresh, cut into tidbits
    • 1/3 cup dates sliced
    • 2 small yams micro waved red garnet yams or one larger one (about 3 – 4 cups yam cubes)

    Instructions

    1. Microwave yams until they yield to pressure with a mitted glove. Let cool so you can handle without burning your fingers.

    2. Cut the rind and center core from 3 or 4 slices of fresh pineapple. Cut into tidbit sized pieces. Put into a heavy saucepan over medium low heat.

    3. Measure approximately 2 cups of fresh pineapple tidbits

    4. Slice the dates.

    5. Put pineapple and dates heavy saucepan over medium low heat.

    6. Continue cooking the pineapple and dates until the pineapple becomes somewhat clear – translucent. Stirring every few minutes.
    7. Meanwhile, cut the yams into bite-sized pieces.
    8. Add the yams back to the pineapple; gently stir into the pineapple and dates. Cover the saucepan and heat for a minute or two to reheat the yams.
