This should really not be called a recipe; it’s just too easy. The flavors together are really quite nice. Do notice that there is no oil, butter, salt or sugar.

Ingredients
- 2 cups pineapple fresh, cut into tidbits
- 1/3 cup dates sliced
- 2 small yams micro waved red garnet yams or one larger one (about 3 – 4 cups yam cubes)
Instructions
- Microwave yams until they yield to pressure with a mitted glove. Let cool so you can handle without burning your fingers.
- Cut the rind and center core from 3 or 4 slices of fresh pineapple. Cut into tidbit sized pieces. Put into a heavy saucepan over medium low heat.
- Measure approximately 2 cups of fresh pineapple tidbits
- Slice the dates.
- Put pineapple and dates heavy saucepan over medium low heat.
- Continue cooking the pineapple and dates until the pineapple becomes somewhat clear – translucent. Stirring every few minutes.
- Meanwhile, cut the yams into bite-sized pieces.
- Add the yams back to the pineapple; gently stir into the pineapple and dates. Cover the saucepan and heat for a minute or two to reheat the yams.
