Berry Delicious Apricots and Pistachios

Our house guest wants this recipe - it has a very nice texture and the flavors are a hint of India.
Ingredients:
2 cups cooked wheat berries
4 cups water
1 tablespoon extra-virgin olive oil
1 cup onion, chopped
2 teaspoons garlic, minced
11/2 teaspoons ground cumin
1 cup red bell pepper, seeded and diced
1/2 cup dried apricots, diced
1 cup chopped fresh orange
1/8 teaspoon salt
Freshly ground pepper, to taste
½ cup sliced green onions
½ cup shelled pistachios, slightly toasted
Directions:
If you have cooked frozen wheat berries, defrost; or cook 2 cups of wheat berries in 4 cups water for about 1 ¼ hour, until tender.
Toast the pistachios in a dry skillet. Sauté onions in oil, until lightly browned. Add garlic and cumin and stir for a minute. Add the red bell pepper - stir. Add the orange, salt and pepper and stir in the cooked wheat berries. Add the apricots and stir all ingredients; add water as needed (about ½ cup). When heated through, put into serving dish and sprinkle with green onions and pistachios.

Toast the pistachios.

Peel a whole fresh orange, leave some of the white inner peel.

Chop the orange.

Chop the dried apricot.

Slice the green onion.

Ready to cook.

Saute the onions.

Add the cumin and garlic.

Add the red peppers.

Add the wheat berries.

Add the apricots.

Stir until all ingredients are heated, adding a little water as necessary.

Put into serving dish, sprinkle with green onions and pistachios.

I added Red Pepper Flakes to the recipe…a yummy addition!
Also, nutrient values would be a great addition to you recipes for us weight watchers.

I’ll need to try it with red pepper flakes – sounds good. We enjoy a little zing in our recipes.
I’m sorry about the nutrient values – I just don’t have the time to do all that work. In addition, I think that I got a little spoiled from all the years of having dietetic techs that would do all that time consuming work for my department.

I really like your recipes, but do not like the format for printing.
At the top of each recipe the “home, store, blog, etc.” menu prints out and then the recipe requires a 2nd page of printing.

That is annoying – I hate having the second page too (when it’s not necessary.) I’ll let our programer know what’s going on and see if there is anything that he can do.
I really am sorry, but I’m not technically able to solve this sort of problem.
Meanwhile, you may want to copy the recipe (copy and paste) to a word document; cut what you don’t need and maybe get a one-page printout.

I echo Donna’s comment about printing. I didn’t even see a “print” button so ended up with 11 pages!

Dear Cathy,
Since I often use recipes from the internet; I copy them and take them to the kitchen; so I understand your frustration. But as I explained to Donna, I am not a computer technologist and have no skills in adjusting the website to make it so it won’t print tons of extra pages. To avoid the problem, I copy and drop the recipe on a word document and print it from there; then I know that I will not end up with 11 pages instead of one. Another way is to do a screen copy and save it to your desktop and copy it from there. Donna got two pages from this recipe and you got eleven – what a mess – copies seem to be multiplying on that page.
I do appreciate you taking your time to tell us how the site could work better, but so far the ‘computer people’ have not had the time to fix this problem.
