Herbed Feta Wheat Berry Salad

The following recipe will work in your ‘real life.’ You can easily do this – as in ‘whip it together.’ If you’ve cooked the wheat berries, drained them and stored them in the freezer; you’re ready to make a tasty, zingy salad filled with fiber and a jillion other nutrients. The frozen wheat berries thaw out in a minute or two in the microwave.

There’s no way you can be fooled about the ‘wholeness’ of the grains when you’re eating wheat berries. (Or Dr. Grandma’s products for that matter, because we only use 100% whole organic hard red spring wheat in our products – nothing is taken out!)



Ingredients

Ingredients:

2 cups cooked wheat berries
1 cup feta cheese, crumbled
3 Tbsp. fresh parsley, chopped
3 Tbsp. fresh dill, chopped
 (You can use dried, if your herb garden has had it, like mine.)
2 finely chopped green onions
2 tomatoes, coarsely chopped
¼ cup extra virgin olive oil
¼ cup green olives, sliced in half
2 Tbsp. lime juice
Salt and pepper to taste (optional)

Directions:

In a serving bowl mix wheat berries, feta, herbs, olives, green onions and tomato. In a small bowl, whisk together oil and limejuice; then mix the dressing together with the wheat berry mixture. Serve over a bed of spring greens or other dark lettuce.
