Peanutty Leeks and Tofu Stir Fry

    Ingredients

    1. Mince the ginger.

    2. In a large skillet or wok stir and cook the tofu and ginger until lightly browned.

    3. Slice the leeks.

    4. Cut the large end of the leeks in half before slicing.

    5. Add the mushrooms and leeks to the oil and tofu.

    6. Slice the Chinese cabbage.

    7. Stir until the vegetables are tender.

    8. Add the peppers.

    9. Then add the cabbage and stir until cabbage is wilted.

    10. Add the peanut butter and soy sauce and stir until all ingredients are thoroughly mixed.
    11. Stir in the lime juice. then add peanuts. serve over steamed brown rice or wheat berries.
