A Funny Saturday Morning Just before Thanksgiving

The time crunch seems to have intensified; another way saying it is: “I’m losing it! (If I ever had it. ☺) There were not many minutes for thinking or relaxing between the gym, a funeral, a football game and some work this past Saturday. I served my usual three meals, plus a snack, but breakfast was funny.

The pancakes were already made and waiting in the refrigerator to be placed on the dish, and heated, with the homemade crimson apple topping.  I was feeling pretty good about the breakfast, until I realized that it was the apple topping that I made for a yam recipe. My brain told me that they were cherries that I put with apples from time to time to top pancakes. But the fact is that they were cranberries, pecans and apples. When I figured out what I had done, I was dismayed; but it turned out to be a nice topping for pancakes.  It was a funny mistake, but a good mistake. – It’s not as good a mistake as the glue on Post-its or the sweetness of aspertame (both the results of mistakes), but it was a good outcome to an accident. You might want to try it sometime, another American-Mediterranean nutritious and delicious recipe perfect for diabetics and the rest of us.
