Guacamole

Guacamole is a great snack. However monounsaturated fats provided by olive oil, fish, avocados and nuts don’t raise cholesterol levels like saturated fat does. Reminder: avocado is high in calories – it’s not a freebee.

Make a simple Guacamole
Ingredients
- 2 avocados ripe, peeled, and cut into chunks
- 2 teaspoons lime juice fresh
- 2 tablespoons onion red or yellow, finely chopped
- ½ teaspoon garlic minced
- 1 tablespoon cilantro leaves minced garlic
- 1 roma tomato seeds removed, diced (optional)
Instructions
- Finely chop the fresh cilantro leaves.
- Finely chop the onions and mince the garlic.
- Peel the avocados.
- In a mixing bowl, combine the avocado with the lime juice.
Mash with the back of a fork or potato masher until crushed. You can make it as smooth as you like; I like mine to have little chunks of avocado.
- Remove the seeds and chop the tomato.
- Then stir in the onion, garlic, tomato and cilantro.
- Serve immediately, or cover with plastic wrap (pressed directly onto the surface of the guacamole) and refrigerate for up to 3 hours. This will make about 1 cup of guacamole, but if you’re having a big group just double or triple it.
- Serve with Chips
