Little Pizza-Like Snacks

Pizza is always a popular hit for the snackers. These little flavorful round snacks are made with whole wheat and lack the thick serving of hard cheese that usually comes with pizza. You can serve these as the main course for an easy lunch or dinner with a little salad, or vegetable; or by themselves as a snack.

  • Yield: 1 serving per pizza thin (6 Servings)

Pizza like snacks made out of whole wheat sandwich thins, with toppings.

Ingredients

Instructions

  1. Cut the artichoke hearts, sun-dried tomatoes and basil into small pieces. Note: kitchen shears are very handy for this recipe
  2. Arrange the sandwich thins with the sliced side up.

  3. Broil in oven for 1 – 2 minutes, until slightly brown. Arrange the ingredients on the sandwich thins;

  4. Arrange the ingredients on the sandwich thins
  5. Put on the chopped artichoke hearts.

  6. Put on the sun-dried tomatoes and basil.

  7. Sprinkle the Feta and Parmesan cheeses on top.

  8. Return to the broiler for a minute or two, until the Parmesan is just beginning to brown takes a minute or two.
