Almond Apple Cake with Raspberry Sauce

This flavorful dessert is made with extra virgin olive oil, zero-calorie all-natural sweetener, 100% organic whole-wheat flour plus fruit and nuts. Dessert is so often thought of as not positively contributing to the day’s nutrition; but this dessert is definitely contributing in a big way. It’s just icing on the proverbial cake; those with diabetes and those watching their weight are actually able to just count this dessert as a healthy menu item.

Ingredients:

2 cups of Dr. Grandma's Whole Wheat Muffins Your Way Mix (with accompanying 1/4 cup extra virgin olive oil)
Two eggs or ½ cup egg substitute
1 ½ tablespoons almond extract
¾ cup water
3 cups peeled and sliced fresh apples
1 ½ tablespoons fresh lemon juice
½ cup chopped almonds
2 Tablespoons sweetener of your choice

Directions:
Preheat oven to 325º F.
Grease an 8" X 8" baking dish with vegetable spray.
Toss apple slices with lemon juice. Mix water, olive oil, eggs, and almond extract. Mix egg mixture with 2 cups of Dr. Grandma's Muffins Your Way Mix. Stir until just moist (do not over mix). Pour into prepared dish. Sprinkle with chopped almonds. Arrange apples and sprinkle with sweetener.

Bake for 35 - 45 minutes, until center tests clean with a toothpick.

Note: If you use a 9” X 9” baking dish, it will be done in about 25 to 35 minutes.

I like to put a generous swirl of Raspberry Sauce on a plate and place a piece of cake on top. Or put cake and drizzle raspberry sauce over the top.
