Merry Graham’s Spiced Avocado-Orange Pecan Muffins

Merry Graham won Second Place in the Dr. Grandma's 2010 Recipe Contest with her Spiced Avocado-Orange Pecan Muffins. Merry's recipe shows a creative way to add the moisture, monounsaturated fats and a huge load of nutrients to a snack, dessert or breakfast item.

Ingredients

2 whole eggs or ½ cup egg substitute
1 cup mashed avocado
1/2 teaspoon orange extract
2 teaspoons orange zest
1 teaspoon ground cinnamon
¼ teaspoon ground nutmeg
¼ teaspoon ground cloves
2 cups of Dr. Grandma's Whole Wheat Muffins Your Way Mix (with accompanying 1/4 cup extra virgin olive oil)
½ cup toasted pecans, chopped
12 pecan halves for the top

Directions

Heat oven to 400º F. Coat muffin pans with vegetable spray.

In a large mixing bowl, mix eggs, avocado, orange extract, orange
zest, cinnamon, nutmeg, clove, water, and olive oil.

Add muffin mix and chopped pecans, and stir just until moist.

Spoon batter into muffin tin. Place a pecan on top of each muffin.

Bake until golden brown and a toothpick comes out clean from the center of the muffin; about 14 to 18 minutes.

Remove from muffin tin to wire rack immediately, before cooling.

Makes 12 muffins.
