Banana-Nut Pancakes with Caramel Topping

Add some bananas and some nuts to your pancakes. This pancake recipe is great for banana lovers.
Ingredients:
- 1 1/4 cup wheat pancake mix
- 1 1/2 cups water
- 1 large egg
- 2 tablespoons of extra virgin olive oil (or vegetable oil)
- ½ c. mashed ripe bananas
- 2 Tbsp. chopped walnuts or pecans
Directions:
Mix together the wet ingredients; egg, water and oil. Pour over the dry pancake mix.
Do not over mix; there will be lumps and that’s fine.
Stir in the bananas and nuts.
Cook in hot skillet; turning once.
Top with sliced bananas, chopped nuts and fat-free caramel topping.
