Banana-Pecan Pancakes

This recipe is as fancy as you will find in an exclusive breakfast club; your friends and family will think that you spent hours making a special breakfast just for them.

Ingredients:
  • 1 1/4 cup whole wheat pancake mix
  • 1 1/2 cups water
  • 1 large egg
  • 4 tablespoons of extra virgin olive oil (or vegetable oil)
  • 1 cup mashed very ripe bananas
  • 1/2 c. chopped pecans
Directions:

Mix together the wet ingredients; egg, water and oil. Pour over the dry pancake mix.

Do not over mix; there will be lumps and that’s fine.

Stir in bananas and pecans.

Cook in hot skillet; turning once.

Top with sliced strawberries, bananas and whipped cream or yogurt.
