Lemon-Poppy Seed Pancakes

The flavor of these pancakes really shines. Zesty lemon with poppy seeds and a whole wheat pancake make for one great breakfast.
Ingredients:
- 1 1/4 cup wheat pancake mix
- 1 cup water
- 1 Large egg
- 2 tablespoons of extra virgin olive oil (or vegetable oil)
- 1/2 cup sour cream
- 1 tea. poppy seeds
- 2 tea. lemon zest
- 2 tea. fresh lemon juice
Directions:
Mix together the wet ingredients; egg, water and oil. Pour over the dry pancake mix.
Do not over mix; there will be lumps and that’s fine.
Mix in the poppy seeds, lemon zest and lemon juice.
Fold in 1/2 cup sour cream.
Cook in hot skillet; turning once.
