Turkey Soup

We sometimes eat too much at holiday meals. Cutting back from the extra calories doesn't need to be painful. While tasting good, this recipe will warm, nourish and fill you -- but with fewer calories.

Ingredients:

Turkey carcass, drumsticks, wings, extra meat
1 teaspoon each of crushed tarragon, basil and sage leaves
½ teaspoon pepper
1 cup uncooked wheat berries
2 - 3 cups chopped carrots
2 cups chopped celery
2 cups chopped onion

Directions:

* Put the carcass and leftover meat in a stockpot with wheat berries, herbs and pepper, cover with water. Bring to a boil, reduce heat, cover and simmer, for 2 - 3 hours.

* Cool, skim off fat. Remove bones and skin. Save meat pieces; cube 2 - 3 cups for soup. If necessary, add water to make 2 quarts. Bring to a boil. Add carrots, celery, onion, 2 - 3 cups of cubed turkey.

* Add salt, if necessary.
