Whole Wheat Oatmeal Cookies

Doctor Grandma's yummy whole wheat oatmeal cookies combine rolled oats and whole wheat to make some deliciously enjoyable oatmeal cookies.

Ingredients:
  • 2 sticks of softened butter (not melted) ½ lb.
  • 1 1/4 c. erythritol or sugar
  • 2 large eggs
  • 1 tea. vanilla
  • 1/4 c. no-sugar added applesauce
  • 1 1/2 c. whole organic hard red spring wheat flour
  • 1 tsp. baking soda
  • 1 tsp. ground cinnamon
  • 1/2 tsp. salt
  • 3 c. quick or old-fashioned rolled oats
  • 1 c. raisins (optional)
Directions:
  1. Preheat oven to 375° F.
  2. Beat butter and sweetener/sugar until fluffy.
  3. Add eggs, vanilla, and applesauce, beat again.
  4. Mix flour, baking soda, cinnamon, and salt.
  5. Add flour mixture a little at a time to butter mixture.
  6. Add the rolled oats and raisins and mix.
  7. Drop by rounded tablespoonfuls onto ungreased cookie sheet.
  8. Bake 8 to 10 minutes, until golden brown.
  9. Cool for a minute and remove to a wire rack.
