Whole Wheat Peanut Butter Cookies

These yummy whole wheat peanut butter cookies are similar to traditional peanut butter cookies, but make with whole wheat flour for added nutrition.
Ingredients:
- ¼ lb. butter (1/2 c. or 1 stick) Soft, but not melted.
- ½ c. peanut butter (an extra tablespoon, if you use chunky)
- ¾ c. Dr. Grandma’s Sweetener or sugar
- 1 egg
- 1 ¼ c. Dr. Grandma’s 100% whole organic hard red spring wheat flour
- 1 tsp. baking soda
- ¼ tsp. salt
Directions:
- Heat the oven to 350°F.
- Cream the butter and peanut butter. Add the sweetener and egg, beat well.
- Mix the dry ingredients and add gradually to the peanut butter mixture.
- Scrape the bowl with a rubber spatula and mix until smooth.
- Use a 16 – 18 inch piece of waxed paper to shape a roll of the cookie dough.
- Put into the refrigerator until firm. If you handle it lightly and work quickly, you can go to the next step without refrigeration.
- Slice roll into ¼ inch slices.
- Place on unbuttered cookie sheet about an inch apart.

- Bake for 10 to 12 minutes, until slightly browned.
- Gently transfer to cooling racks.
