Whole Wheat Snickerdoodles

Ingredients:
- 1 c. butter, softened but not melted
- 2 eggs
- 1 1/3 cup sugar or Dr. Grandma’s Zero-calorie Natural Sweetener
- 1 tsp. vanilla
- 2 ¾ c. Dr. Grandma’s 100% whole organic hard red spring wheat flour
- 1 tsp. baking soda
- 1 tsp. cream of tartar
- ¼ tsp. salt
Roll cookies in:
- 2 tsp. cinnamon
- 3 Tbsp. sugar or Dr. Grandma’s Sweetener
Directions:
- Preheat the oven to 375 degrees.
- Combine cinnamon and 3 Tbsp sugar in a small bowl and set aside.
- Sift together flour, baking soda, cream of tarter and salt then set aside.
- In a large bowl beat sweetener with softened butter for 2 minutes. Beat in eggs and vanilla. Gradually beat in flour mixture until thoroughly combined.
- Roll dough into 1 1/2 inch balls and then roll in cinnamon mixture to cover. Place cookies two inches apart on a cookie sheet and flatten a little.
- Bake for 10 - 12 minutes or until the tops are light golden brown. Do not over bake.
- Transfer to rack to cool completely.
