A Tasty Way of Staying Healthy in a Hurry

Did you put any diced turkey in the freezer for these busy December days? If yes, maybe you’d like to fill a whole wheat pita bread or serve on a bed of lettuce, like I did. It’s actually a very tasty recipe for a quick healthy American-Mediterranean meal.

Curried Turkey Salad
Ingredients:
1 ½ cups chopped cooked turkey meat (Chicken works well too.)
¼  cup raisins
1/3 cup peanuts or cashews
¾ cup tender cooked wheat berries
2 Tablespoon chopped green onion
2 Tablespoon chopped fresh parsley
1 cup chopped celery
1 cup cored, chopped apple (crisp tangy apple)*
1 teaspoon of lime or lemon juice*
*After the apples are chopped, toss with lemon or lime juice to keep them from
turning brown.

Dressing Ingredients:
1/2 Tablespoon yellow curry powder
1/4 cup non-fat Greek yogurt
2 Tablespoons mayonnaise
2 Tablespoons sour cream
1 Tablespoon honey or Delight
1/4 teaspoon ground ginger
Pepper, if desired

Directions:
•    In a large bowl, mix the curry powder, yogurt, mayonnaise, honey or Delight, and ground ginger. Add pepper if desired.
•    Fold in the turkey, apple, raisins, green onions, parsley, and celery. Taste. add pepper if needed.
Serve on a bed of lettuce greens or as sandwich filling.
