Streusel Cake

Great for breakfast, a snack or desert
Ingredients:
- 2 cups of Dr. Grandma's Whole Wheat Muffins Your Way mix (with 1/4 cup olive oil).
- Two eggs or ½ cup egg substitute
- one 20 oz. can of prepared pie filling. (apple, cherry, or blueberry)
Mix Streusel Topping Ingredients
- ½ cup oatmeal
- ¼ cup butter or olive oil
- A pinch of salt
- ¼ cup brown sugar or non-caloric sweetener blended with ¼ teaspoon molasses
Directions:
- 2 cups of Dr. Grandma’s Muffins Your Way Mix, ½ cup removed for topping
- ½ cup oatmeal
- ¼ cup butter or olive oil, plus a pinch of salt
- ¼ cup brown sugar or non-caloric sweetener blended with ¼ teaspoon molasses
- ½ cup reserved Dr. Grandma’s Muffins Your Way Mix
- Preheat oven to 325º F.
- Grease an 8" X 8" inch baking dish with vegetable spray.
- Mix
- ¾ cup water plus 1/4 cup olive oil
- Two eggs
- Mix
- Stir until just moist (do not over mix)
- Pour into prepared dish.
- Top with one 20 oz. can of prepared pie filling. (apple, cherry, or blueberry)
- Mix Streusel Topping
- Sprinkle with Streusel
- Bake for 40 - 45 minutes.
- Serve warm or cool.
