Carrot Muffins

Nutritious whole wheat Carrot Muffins.

Ingredients:
  • 2 cups of Dr. Grandma's Whole Wheat Muffins Your Way Mix (with accompanying 1/4 cup extra virgin olive oil)
  • Two eggs or ½ cup egg substitute
  • 2 cups grated carrots
  • Optional: 1 teaspoon orange zest (finely grated orange peel)
  • Optional: 1 tablespoon orange juice concentrate.
  • Optional: ½ cup broken nuts
  • Optional: ½ cup raisins
Directions:
  1. Preheat oven to 400º F.
  2. Coat muffin pans with vegetable spray.
  3. Mix
    • 2 cups grated carrots
    • ½ cup water plus 1/4 cup extra virgin olive oil
    • Two eggs or ½ cup egg substitute
    • Optional: 1 teaspoon orange zest (finely grated orange peel)
    • Optional: 1 tablespoon orange juice concentrate
  4. Add
    • One 2 cup packet of Dr. Grandma’s Muffins Your Way Mix
    • Optional: ½ cup broken nuts.
    • Optional: ½ cup raisins.
  5. Stir until just moist (do not over mix).
  6. Fill 12 muffin tins.
  7. Optional: Sprinkle with cinnamon and sugar, if desired.
  8. Bake until golden brown and a toothpick comes out clean from the center of the muffin; about 16 to 20 minutes.
  9. Remove from muffin tin to wire rack immediately, before cooling.

Optional Topping: Sprinkle with cinnamon and sugar, if desired.

Makes 12 muffins.
