Chocolate Chip Muffins

Have some chocolate chip muffins, and don't feel guilty. Rest easy knowing that they are still whole wheat nutritious!

Ingredients:
  • 2 cups of Dr. Grandma's Whole Wheat Muffins Your Way (with accompanying 1/4 cup olive oil).
  • Two eggs or ½ cup egg substitute
  • ½ cup of chocolate chips and ½ cup broken nuts; or 1 cup chocolate chips
  • Optional Topping: Sprinkle with cinnamon and sugar, if desired.
Directions:
  1. Preheat oven to 400º F.
  2. Coat muffin pans with vegetable spray.
  3. Mix
    • ¾ cup water plus 1/4 cup olive oil
    • Two eggs or ½ cup egg substitute
  4. Add
    • 2 cups of Dr. Grandma’s Muffins Your Way Mix
    • ½ cup of chocolate chips and ½ cup broken nuts; or 1 cup chocolate chips
  5. Stir until just moist (do not over mix).
  6. Fill 12 muffin tins.
  7. Optional: Sprinkle with cinnamon and sugar, if desired.
  8. Bake until golden brown and a toothpick comes out clean from the center of the muffin; about 14 to 18 minutes.
  9. Remove from muffin tin to wire rack immediately, before cooling
  10. Makes 12 muffins.
  11. Can be frozen
