Peach Muffins

Whole wheat Peach Muffins, just add your favorite peaches and go.

Ingredients:
Directions:
  1. Preheat oven to 400º F.
  2. Coat muffin pans with vegetable spray.
  3. Mix
    • ½ cup water plus extra virgin olive oil
    • Two eggs or ½ cup egg substitute
  4. Add
    • 2 cups of Dr. Grandma’s Muffins Your Way Mix
    • Stir until just moist (do not over mix).
  5. Gently stir in: 1 ½ cups fresh, diced frozen, or drained canned diced peaches
  6. Fill 12 muffin tins.
  7. Optional: Sprinkle with cinnamon and sugar, if desired.
  8. Bake until golden brown and a toothpick comes out clean from the center of the muffin; about 16 to 20 minutes.
  9. Remove from muffin tin to wire rack immediately, before cooling
  10. Makes 12 muffins.
  11. Can be frozen
