Zucchini Nut Muffins

Whole wheat muffins with some nutty Zucchini.
Ingredients:
- 2 cups of Dr. Grandma's Whole Wheat Muffins Your Way Mix (with accompanying 1/4 cup extra virgin olive oil)
- Two eggs or ½ cup egg substitute
- 2 cups grated zucchini
- ½ cup broken nuts or sunflower seeds (optional)
- Optional: 1 teaspoon orange zest (finely grated orange peel)
- Optional: 1 tablespoon orange juice concentrate
- Optional: Cinnamon and sugar for topping
Directions:
- Preheat oven to 400º F.
- Coat muffin pans with vegetable spray.
- Mix
- 2 cups grated zucchini
- ½ cup water plus extra virgin olive oil
- Two eggs or ½ cup egg substitute
- Optional 1 teaspoon orange zest (finely grated orange peel)
- Optional 1 tablespoon orange juice concentrate
- Add
- 2 cups of Dr. Grandma’s Muffins Your Way Mix
- ½ cup broken nuts or sunflower seeds (optional)
- Stir until just moist (do not over mix).
- Fill 12 muffin tins.
- Optional: Sprinkle with cinnamon and sugar, if desired.
- Bake until golden brown and a toothpick comes out clean from the center of the muffin; about 14 to 18 minutes.
- Remove from muffin tin to wire rack immediately, before cooling.
- Makes 12 muffins.
- Can be frozen
